is it best to buy fresh and freeze, or buy in a jar?

Buy fresh and keep in a container in the freezer... more often than not the stuff in a jar is full of preservatives

do you peel it and freeze or just as you buy it?

just freeze as it is.You can grate the frozen ginger skin and all without peeling it.The skin usually stays on the opposite side of the grater.

We peel ours, then slice it into thin slices with a potato peeler and store it in a screwtop jar in the fridge, just covered in sherry.
Keeps indefinitely.
The sherry makes a nice addition to a stir fry with the last of the ginger.

I recommend both of the methods at #2/#4and#6 as above - the ginger is very convenient if stored in either way, and IMO is way better than the jarred product, although that is better than not having the ginger at all.:-))
