Yum, fresh Tuna.

Tuna Steaks best cooked a couple of minutes each side in lightly oiled chargrill pan.
Served with a nice Lime and Chilli Sauce, 1/2 c chopped and firmly packed fresh mint leaves, 1/2 c chopped fresh coriander leaves, 1 tsp grated lime rind, 1 tbsp lime juice, 1 tsp fresh grated ginger, 1 jalapeno chilli seeded and finely chopped and 1 c natural yoghurt. Mix all except yoghurt together then fold in the yoghurt and season to taste with salt and pepper.

Cheers.

Tuna with coriander noodles.

1/4 c lime juice, 2 tbsp fish sauce, 2 tbsp sweet chilli sauce, 2 tsp grated palm sugar, 1 tsp sesame oil, 1 clove garlic finely chopped, 1 tbsp virgin olive oil, 4 tuna steaks, about 200g noddles cooked as per packet instructions (your choice but preferably thin like soba), 6 spring onions thinly sliced, 3/4 cup chopped fresh coriander leaves and lime wedges to garnish.

First 6 ingredients in a small bowl and mixed together makes the dressing.

Heat oil in chargrill pan, cook steaks 2 minutes each side, then cut into even cubes or slices.

Place hot noodles on a dish with half of dressing, half of spring onions and half of coriander, gently toss together.

Place the noodles then onto serving plates and top with tuna.
Mix the remaining dressing with rest of spring onion and coriander and drizzle over the tuna.

Garnish with lime wedges.
