Do you have a good spinach/silverbeet feta muffin recipe please?Want to make them for brunch tomorrow....have loads of silverbeet so thought I could substitute........Thanks.Julie

200 g frozen spinach, thawed
180 g feta cheese (fat-reduced is fine)
250 g flour
3 teaspoons baking powder
1 teaspoon salt
2 eggs, beaten
80 ml olive oil
300 ml milk

Total Time: 35 mins
1 Line your muffin pan with paper cups and cut the feta cheese into small chunks. 2 Preheat the oven to 180°C. 3 In a bowl mix flour, baking powder and salt. In another bowl combine spinach, eggs, olive oil and milk. Add in the flour mixture and be sure not to overmix. Fold in the feta cheese cubes.

1 cups plain flour
3/4 cup of wholemeal flour
2 tblsn caster sugar
4 1/2 tsp baking powder
2 cups chopped spinach (or baby spinach)
160 grams feta cheese cut into 1/2 inch (1cm) cubes
1/2 tsp nutmeg
1 egg, lightly beaten
3/4 cup milk
1/3 cup of butter, melted
Method

1.Preheat the oven to 200°C . Prepare 12 regular muffin tins by brushing the bases with oil or line with paper cases.
2.Sift the flour, nutmeg and baking powder in a bowl. Mix in the spinach, sugar and feta.
3.In another bowl mix the egg, milk, and butter.
4.Add the liquid ingredients to the dry ones and fold lightly with a fork. Do not over mix.. it just has to be wet mostly through.
5.Spoon into muffin tins.
6.Bake for approximately 15-20 minutes or until just starting to brown and a skewer or toothpick comes out clean.
7.Place muffins on a wire rack to cool.
