Anyone an experienced cheesemaker?

Once you've made your cheeses (esp cheddar types) what is the best way you've found of safely storing them until mature to avoid spoiling/unwanted moulds?

I have a fridge just for cheese that I age mine in, the temp sits at 10-12 degrees, so is perfect for cheese! Since aging in this fridge this has eliminated unwanted mould growth.

We cover ours with Cheesecloth and then smother in lard! .
