keep it in the fridge - slows down rising process.You'll need to punch it down and shape it prior to final rise before baking once you get it out of the oven. It'll take a little longer to rise being cool.

is it in a bread maker? because it can be put on 'hold' in that it probably just will rise a bit more?

Probably too late now but if you made ciabatta, you can just leave it till you are ready to cook it as it requires an 18 hour proving.
