How do you know rhubarb is ripe?

I thought you just picked it when the stems were big enough to use but not so big that they were woody.

Rhubarb is botanically a vegetable, not a fruit, so the concept of "ripeness" doesn't apply.The stalks are ready to pick as soon as they appear , but it's sensible to let them get to a decent size first.

The redness of the stalks is dependent on the variety and is not an indicator of readiness.
