Need a really easy good plain muffin mix...

that I can add boysenberries, rasph, strawberrys etc later in the year.
have frozen the berries, and just need a good basic muffin mix, so can then throw in the berries.

Theres an awesome one in the Alison Holst dollars and sense cookbook....Sorry though...I don't have my copy here.Someone will be able to give it to you though I'm sure.

I use the Edmonds Muffin Mix in the bags by the flour and sugar at the supermarket you add eggs and oil to the mix and then throw in your 'extras'

Her you go: I'm not sure were I got it from but its easy to make and you can use any fruit in it.
Berry Muffins
Ingredients:
1 & 3/4cup flour,
2½tsp baking powder,
½tsp salt,
4Tbsp sugar,
1 egg,
3/4cup milk,
45g butter/marg,
1cup berries (fresh, frozen or thawed). or any other fruit. Tossed in 2Tbsp of extra sugar

Method:
Sift dry ingredients add sugar and mix well.
stir in berries minus the sugar they have been tossed in.
Melt butter and add with milk and beaten egg.
Stir until just mixed. spoon into muffin tins/cases and sprinkle left over sugar on top.
Bake 200C for 20-25 mins. makes 10 -12 medium muffins.

You can change the fruit for dried/fresh/canned fruit ie apricots.
