i would just roll the roast in seasoned flour and put into crockpot with only a tiny bit of water (if any), and let it cook.

Turn C/Pot on to heat up.Rub a little oil some crushed garlic, salt and pepper all over roast. Have a frying pan fairly hotput meat in and keep turning to brown all sides, to seal in flavour. Transfer roast to your crockpot and sprinkle a little balsalmic vinegar over it lid on and cook turn once during cooking. When done take out cover with foil to rest, transfer juices to a saucepan and make your yummy gravy.

I often crumble a oxo cube over and a bayleaf in the bottom, I put a small amount of water in say 1/4 cup just to get it going, the juices of the meat are what really cooks the roast.
if you start with too much liquid it will be like a stew!!
