How long is too long to let dough rise?

I am wanting to make something for morning tea tomorrow & am thinking about letting the dough rise overnight so I can put it in the oven tomorrow morning. Would this work, or would the yeast etc be past its best?

It won't be the first time bread dough is left to rise overnight.

If you leave it out all night it will be so well risen, it will probably come and wake you up! ! ! I'd leave it in the fridge overnight to stop it rising so fast and then let it come to room temperature again before baking in the morning.

Quite a few people do the overnight in the fridge method of rising and swear by it.

But I think you do need to let it come back to room temp 1st (as lizab said) so you might as well just make it in the morning!

I think it's done more for the texture etc rather than time saving in the morning.
