Pork roast

i have a nearly 2kg pork middle fillet roast for xmas day, what is the best way to cook this for it to be moist but have nice crackling, tia

Cook it slowly.When it's ready to rest, cut the crackle off and grill it if it's not crackled.

For it to be moist you really do need to rest it.

Make sure it has been brought up to room temperature before cooking.! Dry the crackling and sprinkle salt and olive oil on top and cook for first 30 minutes in a very hot oven. Crackles really well when you do this.

We've got a hooded barbecue - and love cooking pork roasts on the barbecue these days - its absolutely beautiful - very tender on the inside, and lovely crackling on the outside.Only problem is - you need to have the time to cook it.Takes longer than in the oven we find.
