When you melt chocolate, if you don't use it all, can you let it go hard again, and re-melt it another time?

I tried this once, but when I tried to re-melt it, it separated and went manky so haven't tried it again.It's always possible that I had the heat too high though, or some water got in there or something.

Yes you can - did it the other day.Be sure to use gentle heat.You can spread leftovers onto baking paper then when its set, break it up and pop it into a plastic bag.At this time of year, I just keep a stainless steel bowl with chocolate in and have one of those Glad showercap thingy covers that I keep on it.Heat it by popping it into the top part of a double boiler.

are you using good chocolate or compound.A bain marie is the best method.If you overheat compound it will seize, but you can add 10% of the total weight in oil to the mix (compound is already made with oil so dont worry about damaging the quality)
