BBQ the meat, chicken or fish and serve with salad and potatoes - last year we didn't have a BBQ and it was simply too hot to cook indoors so we ended up eating really late

All year, but more so in summer, I make various composed salads i.e. combinations of vegetables and meat/cheese/fish/eggs that go well together and make up a balanced meal, arranged on a big serving dish with a complementary dressing.For example:rocket, baby cos, red onion, smoked eggplant, roasted capsicums, thinly sliced rare beef, roasted kumara, parsley or tarragon vinaigrette.
One of the joys of composed salads is that most of the prep. can be done ahead of time and then the salad takes only a few minutes to assemble before serving.

I guess the obvious is bbq and let someone else cook. lol. But we tend to have things like ham with potato salad and green salad, Or rolls filled with cold meats and veg, Tuna and rice salad etc. Having cold boiled eggs in the fridge is always handy along with beetroot, bean salad etc. Also, because I'm home all day I can make bacon and egg pie in the cooler part of the day and serve it cold that night. There really are heaps of options when you get going Your quiche and salad sounds really good - enjoy :-)
