There's another variation which uses orange juice instead of coffee.I made it and kept it in the freezer.

So you make the iced coffee with 1t coffee, milk and ice and put in a blender, or make a hot coffee, let it cool, then freeze a little!

Somebody posted this a while ago (sorry, have forgotten who) and I saved it.Hope this helps, if it doesn't confuse ;)

"1kg dried fruit (of your choice)
2 C orange juice OR 2 C strong black coffee (soak overnight)

Next day stir in
2 C flour
4 t Baking powder
1 t spice (or your choice; mixed or cinnamon!)

Pour into a greased tin and cook @ 180 deg C for 1-1/2hrs.

Turns out moist and freezes well.

ps: somepeople like the dried fruit soaked in sherry but I think that's a blatant waste of alcohol haha!"

How about this one
1 kg mixed fruit soaked in 2 cups of coffee.(1 tbs coffee per cup) over night, in morning add 2 cups self rising flour, 150gms fruit and nut chocolate (chopped) bake 2 hrs 150 deg, This is the best moist christmas cake, even the kids like it.

According to my recipe the quoted recipe is missing one ingrediant.

1 teaspoon baking powder.

yes, i know SR flour and BP.but thats what my version of this recipe has.and in fact.that is 4 ingrediants.
