Diabetic xmas cake... what brands of mixed fruit

are suitable for diabetics any particular brands that you like? alot of them have sugar in them.

I use whatever is on special. I stand to be corrected here, but I think the sugar is what is in the actual fruit. But someone will correct me if I am wrong. However, I use any brand, but tasti is the best, personally.

I'm type 1 diabetic myself, I would recommend finding a diabetic xmas cake recipe as they have been moderated for diabetics and sometimes you can still use normal fruit mix but also add other things to bring the sugar content down to a suitable level. I think the healthy food guide magazine has one on their website.http://www.healthyfood.co.nz/

there is a diabetic baking thread which has some cakes in.
I use any mixed fruit in mine, use wholemeal flour instead of white.

As a cake decorator I have used this recipe quite a few times as
wedding cake. Works well.
Diabetic Fruit Cake
250ml water,
25g sugar, 100g monounstaturated spread,
1/2 tsp mixed spice,
1/2 tsp baking soda,
450g dried fruit (currants, rasins, sultanas, cherries),
2 number 7 eggs,
1 cup wholemeal flour to which 1 and a half tsp baking powder has
been added.
Place all the ingredients except the eggs and flour into a saucepan
and boil together for 5 minutes, stirring occasionally. Allow to
cool. Blend in the eggs and flour and mix well. Bake in a 9” tin for
1 hour at 160C or 325F or number 3 gas . Test with skewer
