Vegan food ideas

We're having a big family get together, and 3 coming are vegan. We'll need some vegan food, lunch and snacks, and the rest vegetarian. Vegetarian is easy enough, but what's things that are nice and easy and vegan...?

Toadfish's brown rice salad-it's legendary!
Brown Rice Salad Best Salad ever! 1 cup brown rice, 1 3/4 cup water, 1/4 cup soya sauce (light if available), 1/2 onion finely chopped, Cook the rice in the water & when cooked & still hot add the soya sauce and finely chopped onions let cool(a couple of hours preferably overnight) Add the following ~ 1 red pepper chopped 1/2 cup roasted peanuts chopped 1/2 cup each of roasted sunflower and pumpkin seeds and sultanas. Dressing: 1/4 cup olive oil 2 tbsp lemon juice 1 tsp grated lemon rind 1 clove garlic crushed 1 tsp fresh ginger 1 tsp honey pinch of salt. Mix and pour over salad

Also how about a big platter of roast veges-potato, parsnip, red onion, eggplant, red onion, capsicum etc (that's what my Christmas dinner will be this year!)

Vegetarian sausages? Not sure if they are vegan.

For snacks, you could make a vegan antipasto platter with felafel, pickled veges like artichokes, sundried tomatoes, olives, onions, chargrilled veges like eggplant and courgette, hummus, dairy free breads and crackers etc.

Meals, as above with the roast vege platter, orgran makes a good dairy free gravy powder, vege/tofu stir fry or curry (just check the curry sauce/stir fry sauce for dairy)

Plenty of vegan style salads you could make, jjust pile a heap of blanched and raw veges and nuts into a bowl, just check the dressings and don't add cheese.

nice suggestion,I'm doing some of those for my daughter and partner.... must Remember olive oil or vegetable oil for roasting

Most are, there are a couple that aren't because they have either dairy, egg or parmesan etc.

It's easy to tell quickly though, because they will usually have the dairy products highlighted in bold as they are also potential allergy triggers. Some brands will also have 'suitable for vegans' or 'suitable for vegetarians' written somewhere on them too.

How about something like Tofu walnut balls in apricot sauce, and possibly Toadfish'sBrown rice salad or a curried kumara salad with a mesculan salad.
