This recipe for Cheese & Bacon Puffs I have just taken out of the 1st November issue of NZ Womans Weekly.

3 rashers bacon
2 cups grated tasty cheese
1 cup self raising flour
1 egg
1 cup milk

1)Cook bacon either in a hot frying pan or under the grill. Once it is cooked, sit it on a paper towel to drain and cool.
Once cool, chop it into small pieces.
2)Mix together the grated cheese, flour and bacon in a mixing bowl. Make a well in the centre. Beat the egg and mix with the milk. Pour the liquid into the well and mix until just combined.

I helped my 6 yr old granddaughter make these for lunch today.we only got 11 puffs out of it and they took longer than 15 mins to cook.
I used "normal" size muffins tin, not texas or mini, if that makes sense
