Baking cracking on top

When i bake cakes or loaves the top always cracks. What am i doing wrong? Help someone...

Too much mixing after the flour is added.

Another thing I was told and it seems to work, dont cook cakes or loaves on fan bake just ordinary bake as it makes them rise in the centre to fast thus causing them to crack. Since doing my meat dish chocolate cakes on bake I have had no more peaking or cracking.
