this one never fails:
in a large heavy based pot boil the following - 12lb toms, 3 oz of whole alspice in a piece of muslin or old net curtain tied in a knot so that you only have the flavour and not the whole all spice in the mix, 2 1/2 oz of salt, 6 large onions diced, 2 1/2lb white sugar, 1 1/2 pints of white vinegar, 6 cloves of crushed garlic (halve the recipe if you have less tom's to work with)

cook around 3 hours till it has thickened up and the vinager is not sitting on top of the mix. put through a vitamiser and then into clean dry bottles. enjoy! !

MILD TOMATO SAUCE: 3kg ripe tomatoes, chopped; 360g onions, chopped; 400g apples, chopped; 1 cup white vinegar; a cup water; 1 nutmeg; 2 cups sugar. Combine tomatoes, apples, vinegar, water and nutmeg in large saucepan. Bring to boil, simmer, uncovered, stirring occasioally for about one hour till thick. Add sugar, stir over heat, without boiling until sugar is dissolved. Blend or process mixture in several batches until smooth. Push through fine sieve. Discard pulp. Pour into hot sterilsed jars; Seal when cold. Makes about 1. 5 litres.
