How to cook a lamb shoulder roast bone in please?

We have a 3.750kg shoulder roast, bone in.What's the best way to cook it please?

Hi.. I'd slow roast it.. at about 120°C for most of an afternoon - usually from about 1.30pm, with dinner about 6pm....

Place in a roasting dish or ovenproof dish, and cover with a lid or tinfoil and roast slowly.

If you have fresh herbs, place a few twigs of rosemary, washed and shaken dry, underneath, or some thyme sprigs..

And/or, slice peeled onions into thick slices and spread over the bottom of the dish, under where the meat will be, and place the meat on top. The onions will cook as well, and are lovely included when making gravy.

Garlic cloves or small sprigs of rosemary can also be pushed into the surface of the roast.. and/or, several sprigs of mint can be crushed and rubbed onto the meat before cooking. The mint can also be mixed with a little wholegrain mustard before rubbing onto the meat.

For us, mint sauce or mint jelly is a must to serve, plus homemade gravy from the pan brownings..
