What is the best way to melt chocolate

I am making chocolate moulds for my sons bday.I have it in a pot over a pot of water but it is taking forever. I have heaps to make, any quicker way or is this the best.Also can I flavour the chocolate with essence or will it go funny? thanks

not to be funny but your pot is on the stove?? not just hot tap
failing that you could add butter and microwave but it wont be as solid when you mould it

i use the microwave, on 50% power for 30 seconds, stir and repeat until chocolate is melted.

I make lots and lots of my special Rocky Road which sells at my partner's business so am used to melting chocolate.

I know from experience not to use the microwave.

I use my large pyrex handled bowl over a deep frypan of water. I use a maximum of 750gr at a time (two packets of melts/buttons/drops).

If I want to eeek it out a bit (as well as make it softer to the bite) I add a little Cheffade.

I don't use essences but think I would stir through once the runny choccy mix is off the element.
