Meatloaf!

Does anyone know any good meatloaf recipes?

My mum had one which had a nice sauce/gravy that goes with it, have emailed her to ask for the recipe but wondering if anyone has any others or that one?

got this off a message boarder... .

rolled meat loaf

500g mince 1 egg 1 teaspoon soy sauce 1/2 cup fresh breadcrumbs OR 1/2 cup rolled oats 1/2 teaspoon mixed herbs 1 small onion finely chopped FILLING 2 boiled eggs 3/4 cup grated cheese TOPPING 1/2 cup tomato sauce 1/4 cup brown sugar 1 tablespoon vinegar 1. In a large bowl beat egg and add rest of ingredients. 2. Mix thoroughly, (your hand is a good tool here). 3. Spread out a sheet of greasproof paper about 30cm x 20cm and smooth out meat mixture to fit. 4. Cut eggs in quarters longways and put in a line across long side of meat nearest you, 5. Scatter cheese over. 6. Using paper to help you, roll up meat like a sponge roll, place on a baking dish with sides seam side down. 7. Mix topping ingredients and cover loaf. 8. Bake for about 1 hour at 180º.

You'll find a variety of meat loaf recipes there, some of which have a sauce or glaze so maybe you'll find one there that's similar to (or dare I suggest... even better than) your Mum's. :-))

500gr mince,
pkt sausage meat
1c fresh breadcrumbs
2 chopped onions
2tsp curry powder
1lg clove crushed garlic
salt & pepper
1 egg
Combine in a large bowl. Gradually add 1/2c milk & 1/2c water, beat until smooth. Place in a greased roasting dish & shape. Bake 180 for 30 mins. Pour off surplus fat, then add sauce.

Sauce
1/2c water
1/4c worcestershire sauce
1/4c br sugar
1oz butter
1/2c tom sauce
2TBSPs vinegar (I only use 1 as it's quite strong)
1tsp instant coffee
2TBSPs lemon juice.
Combine ingredients in a saucepan, bring slowly to the boil, reduce heat & simmer 5 mins. Pour over meat loaf & baste frequently. Continue cooking uncovered for 45 mins.
