230g sifted flour
2 generous tsp baking powder
Pinch salt
1 tsp white pepper
½ tsp cayenne pepper
1 egg
30g butter, melted
1 cup milk
60g chopped bacon
70g grated tasty cheese
1 tsp finely chopped parsley or chives or a combination

Heat the gem iron in a 100°C oven until it comes up to temperature.
Combine the dry ingredients with the bacon, cheese and herbs. Combine the butter, milk and egg together and stir through the dry ingredients until you have a lumpy batter. You may wish to add a little more milk as it need to be loose enough to roll off the spoon. Remove the gem iron from the oven and spray generously with oil. Place a spoon of the batter into each gap so it is about 2/3 full. Bake for 15 minutes until just starting to go golden on top. Best eaten that day.

hi lulu, do you mean you put the gem irons in a cold oven set at 100 and when the oven is at temp then the irons are ready?

Woops!! That should read 180°C. Sorry about that. By the time it reached that temperature the iron should be hot. I would normally put the irons into a hot oven for a while. I should say I have not tried these as I only got them out of a paper this evening but I certainly will be making them.

thanks, I will forward the recipe to a friend who inherited gem irons but is not sure how to use them.
