Would it be too weird to make a pie out of it to make it go further. Any other suggestions of what to do with it greatly appreciated.

Use as a filling for baked potatoes, make nachos, tacos or burittos. And yes - you could also make a pie. Weird doesn't matter - as long as it tastes good!

My fave pie from Muzza's in Mt Albert is the beef, chilli, cheese and sour cream one. I never get anything else ... so yes, it's a good idea #1 ... just don't forget cheese :D
