I would like to have a go at making these, whatis a nice easy recipe please... and does it have to be served with bagels or can i use toast or muffins. . thank you in advance. .

Eggs Benedict is usually an english muffin, topped with ham or bacon, poached egg & hollandaise sauce.

One Xmas I served Eggs Benedict for breakfast and let people help themselves, to what they liked. I allowed two toasted muffin halves per person and 2 poached eggs per person. I served cooked spinach, thick slices of warmed tomatoes, bacon and smoked salmon buffet style and accompanied by a jug of Hollandaise Sauce.
