I take the (usually red) stringy part around the meat off, spread some stuffing, whole grain mustard, chutney or relish over the inside and roll up again - place in an oven bag and tie the bag so it's keeping the meat firmly in a rolled shape. Make a few slits in the top of the bag so air can escape while cooking.

Place in an oven dish and roast at 150°C.

Taking the stringy part off means that the outside, tasty browned parts of the meat don't come off when removing the strings, much nicer to have them stay with the meat and be enjoyed.
