The last 2 times I have used this I have found it tastes sweeter than before. It's got to the point where I don't want to use it when I make chicken and mushroom pasta. I am trying to make it healthier by using this as opposed tocream which I find too heavy. I just really dislike the sweet taste. Anyone else noticed it. Even the plain evaporated can is too sweet as well.

Can't say I have noticed, however, I have not had evaporated milk in ages either. I usually only use it for my rice pudding which i have not made in a long time either as DH is not a rice pudding fan.
