the kindergarten my daughter goes too is trying to get a cookbook with basic recipes and ingredients together for a fundraiser.

I was wondering if any of you would mind sharing some recipes for cakes/slices/easy meals etc on here that i could then copy off and use in our cookbook.

If not, thats ok but i'm just trying to get it full and know i have gotten quite a few recipes off here but am unsure if we could then use them in a kindy's cookbook.

(hope that all makes sense)

Here are two of my favourites that I share on here all the time.

Caramel Crusted Rhubarb Pudding

¾ cup flour
1 teaspoon baking powder
½ cup rolled oats
¼ cup white sugar
100g melted butter
Stewed rhubarb (and or apple)
¾ cup brown sugar
1 tablespoon custard powder or cornflour
¼ cup boiling water

Preheat oven to 180c.
Sift flour and baking powder into a bowl.
Add rolled oats and white sugar.
Mix in melted butter to make a crumble mixture.
Sprinkle over rhubarb.
In the discarded bowl, combine brown sugar and custard powder.
Spoon over crumble mix.
Carefully pour over the boiling water.
Do not stir.
Oven bake for 30 minutes.

Muesli Bars

1 ½ cups rolled oats (big are best)
1 cup ricies or puffed wheat
4 crushed weetbix
1 cup long coconut
1 cup dried fruit
½ cup nuts
½ cup seeds
¾ cup brown sugar
½ cup honey
½ cup peanut butter
125g butter

Melt sugar, honey, peanut butter and butter.
Simmer 5 minutes stirring constantly.
Add to combined dry ingredients, mix well.
Press mixture into flat tin lined with paper.
Cool in fridge.
Cut and keep in fridge.

Apricot and Raisin Oat Biscuits
1 cup rolled oats; 1 cup plain flour; 1 cup caster sugar; 1/4 cup chopped, dried apricots; or fresh apricots1/4 cup raisins; 1/4 cup shredded coconut 125 g butter; 1 tbsp honey; 1 1/2 tsp bicarbonate soda; 2 tbsp hot water Preheat oven to 160C. Combine oats, flour, caster sugar, apricots, raisins and coconut into a bowl. Melt butter and honey and stir in bicarbonate soda and hot water. Add the melted butter mixture to the dry ingredients and combine. Place tablespoonfuls 5cm apart on a lined baking try and flatten with a fork. Bake for 15-20 minutes. Variations: Use ¾ C of white sugar if you don't have caster sugar. Use any sort of dried fruits or nuts in place of the ¼ cup raisins & ¼ cup dried apricots If you don't have enough rolled oats, use other breakfast cereals like weetbix, museli, cornflakes Use spices for flavour eg 1 tsp or so of cinnamon, mixed spice, ginger, allspice etc

Bacon, Cheese and Onion Croquettes

2 cups fresh soft breadcrumbs. . 2 spring onions. . 1 cup grated cheese. . 3 rashers bacon. . 1/2 tsp salt. . pepper. . 1 cup dried breadcrumbs. . 1 egg. . 1 tbsp water... Add sliced spring onions to soft crumbs, add cheese... Mix in diced bacon and season... Leave in fridge to cool ... Shape as required... Beat egg and water, dip in croquettes then roll in dry crumbs... Place in fridge to help set and then fry in butter/oil... Can dip in Coat n Cook if wanted. .

Bologanaise Sauce

1 T olive oil
2 onions, chopped
1 clove garlic, crushed
1 kg beef minced
2 x 410g cans tomatoes
1. 5C water
1/2 C dry white wine
2T tomato paste
3 small beef stock cubes, crumbled
1t dried oregano
1/2t dried majoram leaves
1/2t sugar

Heat oil in pan, add onions and garlic, cook stirring, over a low heat fora bout 15mins or until onions are very soft. Add mince, cook, sitrring until well browned. Stir in undrained crushed toms, water, wine, paste, stock cubes, herbs and sugar. Bring to boil and simmer, uncovered for about 2 hours or until sauce is thickened; stirring occassionally. Serves 4.

BEST EVER CARROT CAKE-made in kitchen wizz.
Here it is again. I really recommend this. So easy. Ends up like a GATEAU. In WIZZ, chop 3 medium peeled carrots until finely chopped. ADD:2 cups sugar, 1 cup oil, 2 teaspoons cinnamon, 4 eggs. Wizz again till blended. Then add:2 cups plain flour, 2 teaspoons baking powder, 1 teaspoon baking soda, 1 teaspoon salt. (can add any xtra spices to taste eg nutmeg or mixed spice and walnuts)Wizz all together till blended. Pour into 26cm large cake tin (lined)& bake @ 150 degrees c for approx 1 1/4 hours. When cold , Ice with Cream Cheese Icing-100grms Cream Cheese, 50 grms butter, 1 teaspoon Vanilla, 2 cups Icing Sugar, Lemon or orange rind. Soften butter & cr cheese. then add other ings -mix till smooth and ice cake.

75grms butter, 1 1/2 cups brown sugar, , 1 150grm pot sour cream. 3 eggs, 1 cup plain
white flour, 1 1/2 tesapoons baking soda, 1 teaspoon mixed spice, 1 1/2 teaspoons
cinnamon, 1/4 teaspoon salt, 3/4 cup wholemeal flour, 2 cups grated carrots, 1/4 cup
raisins (walnuts too if you wish).
CREAM CHEESE ICING 1/2 cup cream cheese, 1 tablespoon butter, 1 teaspoon
vanilla essence or lemon juice, 2 1/2 cups icing sugar.
Soften butter, beat in sugar, add sour cream and eggs and beat thoroughly. Sift flour,
baking soda, mixed spice cinnamon and salt. Add wholemeal flour. Fold into sour
cream mixture add grated carrots and raisins and nuts. Put Into greased and lined 20
cm square cake tin. Bake 180c for about 1 hour. When cold ice with cream cheese
icing. CREAM CHEESE ICING
Beat cream cheese until soft. add softened butter and vanilla or lemon juice and beat
well. Gradually beat in sifted icing sugar until smooth

2 Cups of wholemeal Flour 2 Cups of sugar 2 tspn of Mixed spice 2 tspn Cinnamon 2 tspn of Baking Soda 1 Cup of Walnuts 1/2 Cup of Pumpkin seeds 1 Cup of Sultanas 1 Cup of chopped up dried Apricots
750gm Grated Carrots 1 1/2 Cups oil 4 eggs 2 tspn Vanilla Mix all the ingredients together except the ones above, (carrots oil eggs vanilla) add grated carrots, mix well whisk up 1 1/2 Cups oils with the 4 eggs add the vanilla, then Fold Carefully into the dry ingredients DO NOT OVER MIX Bake at 170oc for up to 2 hours keep an eye on it, Dont forget to line the tin, makes 1 large cake

Chicken Croquettes

80g butter or marg
small onion finely chopped
1/2tsp dried thyme1/2tsp dried oregano
2 cups finely chopped cooked chicken
2 T flour
2 T chopped parsley
1 T french mustard
1 t salt
pinch black pepper
2 tablespoons milk
1 egg lightly beaten
1/4 cup grated Parmesan cheese

Melt 30g of the butter in a large heavy frying pan. Add the onion and cook over moderate heat until soft- about 5 min. Blend in the thyme and oregano and cook 1 min more. Stir in the chicken, flour, parsley, mustard, salt, pepper and milk and cook for 3 min. Remove the pan from the heat and stir in the egg and cheese.

Pour the mixture into a buttered medium sized dish spreading it evenly. Chill in the freezer for 15 min or until stiff enough to shape

Take the dish from the freezer and shape into patties

Melt the remaining butter in the pan over moderately high heat and brown the croquettes for 3 to 4 min each side.

CoconutPassionfruit muffins

2 eggs
1/2 cup sugar
1 cup yogurt plain or flavoured
60g butter melted
1/2 cup dessicated coconut
1 1/2 cups self raising flour
1/2 cup passionfruit pulp

method

preheat oven to 180 degrees
and grease a 12 hole muffin panIn a large bowl whisk eggs, and sugar together til frothy
add yogurt and melted butter and mix well.
Add the passionfruit, coconut and flour and mix gently
Fill muffin pans with the mixture and bake for 15-20 or until golden and they spring back.

Crock Pot Pumpkin Soup

Ingredients 1oz (30g) butter 2lb (1kg) Pumpkin – peeled and cut into inch square pieces 1 medium onion 2 cloves stuck into the onion 2 tspn sugar salt to taste – pinch 2½ cup Chicken Stock 1 cup Milk Method 1. Place butter and pumpkin in crock pot and put onto high. When butter has melted, stir to coat pumpkin and cook for 1 hour on high. (If in hurry, just wait for butter to melt, stir and go to step 2 ignore the hour cooking – still turns out great just slightly less intense flavour). 2. Add onion, sugar, salt and stock. Cover and cook for 8-9 hours on Low OR 4-5 hours on High. 3. When ready to serve, remove the onion. 4. Puree soup in a blender or use a hand held device. 5. Add milk, to achieve correct consistency. (DO NOT add milk if intending on freezing – just freeze as is. Can add milk when thawed). 6. Serve with a sprinkling of Nutmeg and a dollop of sour cream

Golden Syrup Dumplings

Dumplings

* 1 cup self-raising flour
* 1 egg
* 1 tablespoon butter
* 1 tablespoon milk

Syrup

*
1 cup water
*
1/2 cup sugar
*
2 tablespoons Golden syrup or honey
*
1 tablespoon butter

METHOD

Sift flour into a bowl. and rub in the butter until it is like breadcrumbs. Beat the egg and milk together, and carefully mix with the flour to make a soft dough. Do not over-mix as this will make the dumplings tough.

Place the water, sugar, butter and golden syrup into a large saucepan and bring to the boil.

Drop in teaspoonfuls of the dough, cover with a lid and simmer over a moderate heat for about 12 minutes or so until cooked. Remove from the heat and serve with warm runny custard or ice-cream.

Serves 4 - 6 people

Chocolate Surprise in Golden Syrup Dumplings

Serves 4-5

Ingredients

SAUCE
11/2 cups water
1/2 cup caster sugar
2 tablespoons golden syrup
20g butter

DUMPLINGS
40g butter
1 cup self-raising flour
1/3 cup milk
50g (3 rows)Dark Cooking Chocolate

Method

1. Preheat the oven to 200°C. Place all the sauce ingredients in a saucepan and bring to the boil.
2. Make the dumplings. In a bowl rub the butter into the flour until it resembles fine breadcrumbs. Gently add the milk and mix until combined, but do not overwork.
3. Divide the dough into dumpling-sized pieces. Press a chocolate square into the centre of each and totally encase.
4. Place the dumplings into a casserole dish or cake tin. Pour the boiling sauce over the dumplings.
5. Cook in the top half of the oven for 20 minutes.
6. Serve the dumplings immediately with sauce from the casserole dish poured over.

Note: The dumplings can be steamed if the sauce is prepared in a large saucepan. Drop the dumplings into the boiling sauce, cover with the lid and cook for 10-15 minutes.

homemade cream crackersCREAM CRACKERS-

2 cups of flour,
25 grams of butter,
1 1/2 teaspoons of baking powder,
1 teaspoon of golden syrup,
1 teaspoon of salt,
1/2 cup of water, ...

sift dry ingredients, grate or rub the butter into the dry ingredients, mix syrup with water then add the liquid tossing the flour mix, roll out thinly and cut into shapes and prick with a fork
Cook for 10-15 minutes at 190

Mexican Mince and Potato Bake

•1 teaspoon olive oil •500g beef mince •2-3 cloves of garlic – finely sliced •1 green capsicum - chopped •1 yellow capsicum - chopped •8 spring onions (2 bunches) sliced •3 small-medium tomatoes – chopped •1 teaspoon chilli powder •1 tablespoon ground cumin •1 teaspoon garlic salt •1/2 teaspoon black pepper •1/4 teaspoon salt, •3-5 large baking potatoes, sliced thin, •3/4 cup grated tasty cheese. Preheat oven to 180°C. In a large pan, heat the oil, add the mince, capsicums and spring onions. Cook, stirring as needed, until the mince is browned and the vegetables are softened. Add tomatoes, spices and salt, cook, stirring as needed until the flavours are blended, about five minutes. Arrange layers of the potatoes and mince mixture in the baking dish. Cover with foil and bake 30 minutes, uncover and sprinkle evenly with the cheese. Bake until the potatoes are cooked through and the cheese is melted, about 10-15 minutes longer.

Old fashioned Gingerbread Loaf.

50gr butter,
1 Tbsp golden syrup,
1 egg,
1/2 cup brown sugar,
1C plain flour
, 1tsp b/powder,
2tsp ginger,
1tsp mixed spice,
1tsp b/soda,
3/4C milk.

In a med saucepan, gently melt the butter and golden syrup together. Add egg, and sugar - mix well. Sift and mix in all other ingredients except the baking soda. Mix the soda into the milk then stir it into the mix. (Mixture will be runny) Pour into a baking paper lined loaf tin and cook at 180 - 190 deg for about 35 mins or ready when tested with skewer etc

I add crystalized ginger into this recipe as well.

SAUSAGE CASSEROLE

8 Sausages . . 2 Cups Boiling Water
1 onion . . 2 Tbsp Sugar
1 Carrot . . 4 Tbsp Flour
S & P . . 4 Tbsp Vinegar
2 Tbsp Tomato or Worcester Sauce

Place sausages in casserole dish. Grate over carrot & onion. Mix
Sugar & Flour. Vinegar, S&P & Sauce with 2 Cups of boiling water.
Cook at 350f
180c for 1 hour

Slow Cooker Pepper Steak
2 kgs beef sirloin, cut into 2 inch strips ( can use gravy beef or brisket meat)
garlic powder to taste
3 tablespoons vegetable oil
1 cube beef bouillon (oxo)
1/4 cup hot water
1 tablespoon cornflour
1/2 cup chopped onion
2 large green peppers, roughly chopped
1 can diced tomatoes, with liquid
3 tablespoons soy sauce
1 teaspoon white sugar
1 teaspoon salt
Sprinkle strips of sirloin with garlic powder to taste. In a large skillet
over medium heat, heat the vegetable oil and brown the seasoned beef strips.
Transfer to a slow cooker. Mix bouillon cube with hot water until dissolved,
then mix in cornflour until dissolved. Pour into the slow cooker with meat.
Add onion, green pepper, stewed tomatoes, soy sauce, sugar and salt cook for 6-8 hours on low, i serve with creamed potatoes and beans and peas.

weetbix slice

150g butter
1 c flour
5 crushed weetbix
2 T cocoa
1 cup sugar
1 t baking powder
1/2 t vanilla (optional)
Melt butter, pour over dry ingreds.
Press into a slice tin. bake at 180 for 15 or so mins (until it isn't really squishy, but not till it is too hard as is hardens up a bit on cooling)
Ice it with chocolate icing while it is hot (I press it down slightly with my oven mitts first) then cut when cold.

Chocolate Caramel Muffins
1&3/4c flour
1c sugar
1/4c cocoa
1tsp b/soda
Melt 100gr butter. Remove from heat & whisk in 1 egg, 1c milk & tsp vanilla essence. Add to dry ingredients. Mix gently. 1/2 fill muffin tins, add 2 (or more) heaped tsps Caramel Condensed Milk & top with remaining mixutre.
Bake @ 220 15mins.

Val's Kingston Biscuits

200 grams butter
3 tablespoons honey
1 cup oats
1 cup flour
¾ cup coconut
¾ cup raw sugar

Filling
¼ cup cream
40 grams butter
200 grams cooking choc

Melt 200g butter with the honey, stir in oats, flour, coconut & raw sugar.
Roll into cherry sized balls & flatten onto a baking tray.
Bake for 12-15 minutes at 180C.
Allow to cool.

FILLING-
Bring cream to the boil, remove from the heat, add butter & chocolate and stir & mix until all is smooth.
Cool & spread onto biscuits, sandwiching 2 together.

Five Cup Loaf
1cup of milk
1 cup Baking Bran or rolled oats
1 cup dried Mixed Fruit or any dried fruit
1 cup Brown Sugar
1 cup Self Raising flour

Mix dry ingredients and fruit together with a fork, add the milk and mix thoroughly.
Put into a greased loaf tin and bake for approximately 1 hour at 180C use a slightly lower setting if fan baking.
