Mushroom soup recipe?

Hi there - I love mushrooms and wanna make a soup for dinners sometimes... . Any good recipes out there for a mushroom soup or any other recipe using mushrooms! ! !
Winter brings out the mushroom in me for some reason! ! ! !

3 tablespoons butter
1 small onion chopped
500gm mushrooms sliced
3 tablsepoons plain flour
2 cups milk
1 cup chicken stock
1/2 teaspoon salt
white pepper
1 teaspoon lemon juice
chopped parsley or chives

Melt butter in a saucepan. Add onion and mushrooms. Cook until onion is clear. Stir in the flour. Cook, stirring for 1 minute. Gradually add milk and stock stirring constantly. Bring to the boil. Cook for 5 minutes or until soup thickens slightly. Add salt, pepper and lemon juice. Serve garnished with parsley.

Or if you want to put something in the slow cooker and forget about it you could try-

Easy Mushroom and Sausage casserole.

8 sausages
1 large onion
6 flat mushrooms (or more if they are button mushrooms)
1 cup hot water
1x 35gm packet mushroom soup
1/4 cup sherry or orange juice
6 medium potatoes

Turn slow cooker to LOW and coat with non stik spray.

Leave the sausages as they are or cut them in half lengthways. Brown slightly in a non stick pan, then transfer to slow cooker.

Chop the onions and mushrooms and cook in fry pan until onion browns slightly. Add to slow cooker with sausages.

Mix hot water with soup mix in a jug or bowl, add the sherry or orange juice and pour over the sausage mixture. Scrub or peel potatoes and cut in half cross-wise. Put them in the slow cooker with the cut sides against the sides.

NOTE:It is more important for the potatoes to be submerged in the liquid than the sausages.

Cook on LOW for 6-8 hours, stirring gently and repositioning the sausgaes after about 5 hours. The mixture thickens when cooked but you can thicken it more with cornfour or arrowroot paste if you like.

If you like about half an hour before serving you can add 2 or 3 chopped tomatoes.
