Wild Pork

We have been given 2 lovely pieces of wild pork. Have eaten it before but was cooked by someone else , can someone help with this thanks

Honestly, I'd be too scared to eat it after those three people nearly died in the waikato last year.

Don't listen to Geldof that case had little to do with pork and allot to do with buying black market meat of unknown source and age.

Describe the pieces, I like to roast wild pork long and slow with lots of added fat.

First of all no one died,
second it was most likely not the pork,
third any wild meat needs to be cooked slow and hot.

So the way I cook my kunes which are about 3 to 4 years old when the move into the deep freeze is with lots of red wine, bay leaves, thyme and rosemary, salt and pepper and juniper berries. Slow cook all day and it will be delicious!

Serve with potatoes or mashed potatoes or kumara.

I add some red cabbage cooked in red wine (but you can use some vinegar as well instead) , with onions, and add some thinly sliced (peeled) apples at the end (maybe 5 minutes before serving).
