Bought a slim type today. Most of the recipes have ice in them. Is this necessary and if not does it have to be replaced with water?

I have one, I dont use ice. It does have to have some liquid, I use coconut water. Just experiment with it, if juice is too thick add more liquid.

I recently bought one of those and don't use ice. Don't even use a lot of water or juice and find if things turn out a bit thick, rather than diluting I put in a bowl and have with cornflakes or the like and yoghurt. Very pleased with my purchase.
