Hells bells, so many things to do with them - silverbeet been on recently I think from memory - however google the two and you will have hundreds of recipes at your fingertips. I have some I could share and happy to however hard when I have no idea what you like. I often for for inspiration on the interweb. Great place to cruise through!

Courgettes - stirfries, stuffed, add other veges for mediterraen grilled veges. Silverbeet, add to mushrooms and stuff chicken or schnitzels, add in the lasagna layers. Stir fries.

Someone gave me this recipe the other day, I haven't tried it
Silver Beet Pickle Four cups silver beet., white stalks only 7 medium onions 1 quart vinegar 1 Tblsp celery seed 1 Tblsp mustard seed 4 cups sugar Cut vegetables small, sprinkle with one Tblsp salt. Stand 2 hours, drain well and add other ingredients. Boil till tender. Thicken with. 1/2 cup flour 1 tsp turmeric powder 1/2 tsp curry powder 2tsp mustard Mix altogether with 1/2 cup water. Boil 5 minutes.
Now you have to think what to do with the leftover green :-)
