Recipe for

making venison rissoles or patties please. Need to know what to add to the mince.Thanks

Recipe from A Good Spread book (I've not tried it)

750 gr venison mince
400 gr can crushed pineapple
1 cup fresh breadcrumbs
1 small chopped onion
2 Tblsp soy sauce
2 Tblsp tomato sauce
1 Tblsp oregano
2 eggs lightly beaten
Drain pineapple and combine with other ingredients. Make into patties or place whole in a loaf tin. Bake at 180dC for 60 minutes.
Cool completely before removing from pan

I just use my normal meat pattie rissole recipe.

If you think you and your family might enjoy them stronger flavours go well with venison - red wine, garlic, lots of ground black pepper, chilli, rosemary, parsley, bay leaf, mushrooms (not necessarily all of these in your patties or rissoles but maybe they'll provide an idea and the mushrooms in a red wind reduction could work as a lovely accompaniment).
