Beef Wellington

How long do you cook it for? I'm always scared of over cooking it and end up under cooking it. I doe read the recipes but never seem to get it just right. I want medium to medium-rare, but always seem to end up with rare verging on blue.

Penny, are you searing it to start? I have never made it, but need to one day.

reading Ramsay's recipe, sear for 30-60 seconds, then cook at 200c for 15-20 minutes, till pastry is golden and then rest for 10 minutes.

Beef is 15 mins per half kg and 15 mins over for med rare. (weigh the meat only, not pastry and duxelle as well)

Make sure you've seared it first, wrap it, cook it for the times above and you should be right.

I always use a meat thermometer though. Saves slicing into it too early.
