Basic Tomato Sauce

25gr butter
2 Tbsp olive or other vegetable oil
1 onion finely chopped
1 garlic clove finely chopped
1 celery stick finely chopped
400gr canned chopped tomatoes, or 500gr ripe tomatoes, peeled, cored and chopped
2 tbsp. tomato puree
brown sugar to taste
1 tbsp. chopped fresh herbs, and/or 1-2tsp dried herbs
100mls water
salt and pepper
Melt butter with the oil in saucepan. Add the onion, garlic and celery and cook over a low heat, stirring occasionally, for 5 minutes, until softened.
Stir in the tomatoes, tomato puree, sugar to taste, the herbs, and water and season to taste with salt and pepper. Increase the heat to medium and bring to the boil, then reduce the heat and simmer, stirring occasionally, for 15 - 20 minutes, until thickened.
Can be used with lots of dishes
