Butterscotch Apple Dumplings
2 Apples Granny Smith or similar, peeled, cored and quartered
Pastry
1 cup Flour
1 teaspoon Baking Powder
1 dessertspoon Sugar
50 grams Butter
2 Tablespoons Water
Sauce
30 grams Butter
1 cup Brown Sugar
1 Tablespoon Golden Syrup
1 ½ cups Hot water
Mix pastry ingredients together using enough water to make a firm dough. (Food processor makes this quick) If there is time let it rest for 30 minutes.
Take a ‘blob’ of pastry & mould it around a piece of apple, covering the entire piece. Place each into a casserole dish or similar in a single layer.
Combine the sauce ingredients, stir until the sugar is dissolved & then bring to the boil. Pour the boiling syrup over the dumplings & bake in a moderate oven (180 fan bake) 25 – 30 minutes until golden.
Can be made in stages according to need. The ‘pastry’ will keep a day or two in the fridge. The pre-made dumplings will keep a day if well covered. The entire dish can be cooked up to 24 hours ahead of time & reheated while the main course is being eaten.

I agree, this is the quickest easiest dessert I have come across. Tasty too, like your additions!

The dough is meant to be quite thick, and dolloped on top in blobs. it spreads out while cooking to look like cobblestones.

Apple slice.

2 cups self raising flour
1 cup sugar
3 apples, peeled, cored and diced (1cm)
125g butter or margarine
1 egg

directions

Toss apples with self raising flour and sugar in a medium mixing bowl.

Melt butter in a small saucepan on the stovetop or in a small bowl in the microwave. Stir in egg.

Pour butter and egg into the apple mixture and mix until combined.

Spoon into a greased and lined slice tin.

Bake at 180 C for 35 to 40 minutes or until the top is golden brown and a skewer inserted into the middle comes out clean. Keeps for about 3 days.

I added cinnamon, ginger and coconut thread.

(Thanks to whoever posted it), I made it on Saturday, we'll finish it tonight. Yummy hot or cold.

My favourite recipe from my Grandma - Apple Shortcake- can be made into a pie though, same ingredients just using a pie dish!
