If I make a fennel salad, it's always this one, yummy! Fennel and Apple salad 2 fennel bulbs, finely sliced. 100g mung bean sprouts. 1 leg red onion, sliced. 50g roasted pistachios. 2 Braeburn apples, sliced. 50 g shaved Parmesan or Pecorino. 100g rocket leaves Combine fennel, sprouts, onion and pistachios, add apple and toss through dressing and layer on a salad platter with the cheese and rocket. Serve immediately. Great with pork schnitzel, chops or roast pork! Citrus dressing 50ml lemon juice. 1 tbsp honey. 1 tsp grainy mustard. Salt and pepper. 150ml olive oil Combine juice, honey mustard, salt and pepper, whisk together. Add oil and whisk to combine.
