This is a great recipe that I use every year, so easy to make, cooked in the crockpot and tastes great too. It's from Joan Bishop's Crockpot book.
100g soft breadcrumbs
1 cup flour
1/2 cup brown sugar
600g mixed dried fruit
1/2 teasp ground nutmeg,
1 teasp mixed spice,
1 teasp ground cinnamon,
1/2 teasp ground ginger
100g butter
1/4 cup golden syrup
1/4 cup milk
1 teasp baking soda
2 eggs beaten
1 tablsp brandy

Preheat CP on high for 20 minutes. Grease (8 cup capacity) pudding basin. Mix together in a large bowl breadcrumbs, flour and sugar. Add dried fruit & spices, stir well. Melt butter & syrup in a pan, remove from heat and add milk and soda, stir until dissolved. Add eggs and brandy. Pour liquid ingredients into flour mixture and stir thoroughly. Pour mixture into prepared pudding basin and cover tightly with both baking paper then foil and tie with string. Put basin into CP and place on a trivet in the base. Pour 3 cups boiling water around basin. Cover with lid and cook on high for 6-8 hours. Enjoy.

Mine is very simple but easy to make & tasty!.
Easy Christmas Pudding
3 cups mixed fruit
2/3 cup prunes chopped
½ cup chopped walnuts
juice & rind of 1 orange
1/3 cup brandy
2 eggs
100 gr butter
1 cup brown sugar
1 cup flour
1 ½ tsp cinnamon
½ tsp nutmeg
½ tsp baking soda
1 tab golden syrup
Combine fruits, nuts, orange juice, brandy & syrup in a bowl & mix well. In another bowl, cream butter & sugar, then add eggs. Add dry ingreds to the egg mixture. Then add mixture. Spray a 5 cup bowl & pour mixture in. Cover with paper or foil. Bring to boil then reduce heat to a simmer & leave simmering for 5 hours, topping up with water as needed. Can be wrapped & frozen until required. On the day, thaw, return to bowl & boil for a further 2 hours. (I often leave the fruit soaking overnight in the brandy, orange juice & rind & golden syrup)
