TWO QUESTIONS about RATAFIA

I've made some Quince Ratafia (using the recipe from another thread, on here) and I've got a couple of questions:
1. Do I need to shake/turn the bottle, during the 2 - 3 month steeping period?
2. Can the grated quince be used for anything else, after the liqueur is ready and strained off it?
