Yellow capsicums

Can any one tell me are they suitable to freeze, if so how?

Cut off stem then Cut in half take out the membrane and seeds slice into strips or dice what ever suits you into a snaplock bag and freeze.

You can, but they do go a bit soggy when thawed.

In the summer, I cook all coloured capsicums, except green, with onions, tinned tomatoes and garlic. Cook the onions, garlic and tinned tomatoes until the onions and garlic is cooked, then add the sliced/diced capsicum. Simmer until just cooked. Once cool, I freeze in meal size portions. It is good as a vegetable, a pasta sauce, in a stew or my favourite, sausages baked in the mixture until cooked. Served over mashed potatoes.
