Whitebait

Have been given 250grams of Whitebait. Any yummy recipes ?

Lovely, Normally either quick fry or into a nice fritter.

In the older version of Edmonds cook book has a recipe I used but is altered to suit me. I like mine to be very fishy rather than a fritter batter.

For 250 grams whitebait mix 2/3 cup flour, 1/2 tsp salt, 3/4 tsp baking powder all sifted into a bowl. Add an egg (size 7 or bigger) and about a 1/3 cup of milk and mix to a smooth batter with a whisk. Drain whitebait well and gently stir whitebait into batter. In a fry pan with very little bit of butter preferably though oil is okay and add a heaped dessertspoonful of batter and cook both sides until golden. Serve with nice lemon wedges. Lovely.

Dry them, roll them in flour and a bit of salt and pepper, fry in butter, squeeze over a bit of lemon juice. a yummy way to eat them for a change
