Self raising flour, pinch salt, cold water from fridge. Batter fish then into hot oil 160c till batter just starts to turn golden. Drain fish on paper towels leave till cold. Dinner time cook again in oi 190c till golden brown. The double cooking makes nice light crispy crunchy batter good for oysters also.
