Southern blue whiting fillets

Should i dredge them in flour and fry them in butter or straight into butter

Don't fry just in butter, too easy to burn, use some oil and a bit of butter.
Blue whiting is not a strong fish, , if want the true taste of the fish, then straight into the pan.
