i always cook mine untill i can stick a knife in and the juice runs clear with no blood about 45 minutes at 180/200 deg i always do it on a rack and in a bag to keep the oven clean

i also turn it over half way through . start with the bones up

Do you turn the whole bag or take it out of the oven, turn it over in the bag and continue cooking?

slide it out of the oven hold with one hand and a teatowel flip it with the other its easy that way if i was cooking it with out the bag i would put wooden sticks through it to hold it flat

I don't use oven bags. I push three wooden skewers sideways through the flattened bird, one at wing level, one at the halfway point and one at the ankles. It makes it perfectly simple to flip over.

Lay the halved bird flat. Cook at 120 C for 2 - 2.5 hours. Cook until the bird is 75 C at the thickest part of the breast and thigh. Glaze and back in for 15 mins.
