Souvlaki marinade

Does anybody know what the souvlaki takeaway places marinade their meat in. I have googled this and found several which had garlic, salt pepper, oregano lemon juice and zest and olive oil but it still did not give the taste I was looking for.

Did you try it once it had been basted over slow roasted lamb? And was combined with the meat juices? Or maybe like normal takeaways we don't really want to know what they cook their meat in.

My souvaki recipe has garlic and cumin etc if I recall.

When we lived in Greece for a while that is what we were taught to do:

chop lamb into cubes,
put into a bowl
and add marinade: olive oil, garlic, lemon juice, Greek oregano, thyme, paprika and freshly ground pepper.
Leave overnight.
Then thread onto skewers (if using wooden ones soak them in water overnight) and then season with salt just before grilling.
Grill over charcoal and serve with bread and tsaziki (cucumber and Greek yoghurt salad).

Was taught by Greeks and Lebs in Sydney to marinate meats in onion juice for authentic souvlaki flavour.
