Put into the fridge.
Re-heat the next day.
Still porridge!
Might need a bit of extra water.

Lots it seems. :) Which makes sense when you think about the amount of uses oats have in everything from apple crumble to biscuits to meatloaves and rissoles (I did rissoles with oats recently and they were lovely - very moist. always added breadcrumbs in the past). I think the 'trick' if using already cooked oats is to possibly adjust (reduce) the level of other wet ingredients being added. Try a few things, see how you go and please post back with what works well. here's a few ideas to get you started along with the muffin recipe already posted above.

I usually reheat it next day for breakfast but I have also added some to an apple cake recipe that I use and also my muffins, bread and bread rolls.

Have made a big lot of porridge, eaten one day, rest put in bowls(covered)
in fridge, and reheat in M/Wave next morning. I actually prefer it like that, as it seems to set.

add herbs and you have stuffing .i find it easyer to cook it in the microwave you dont have to clean the pot ofter . my mil used to put the pot out for the chooks to peck clean worked well and as nobody seemed to get tummy upsets i guess it was well washed
