Wind dropped Omega plums early - uses?

They are not quite ripe yet, very bitter, will they still be okay for sauce?

Jam or sauce. or puree for topping on ice cream and desserts

Make wonderful jam - I throw in a star anise and some ground ginger for a spicy note.

I have stewed mine and put in freezer as I do with the bulk of the crop.
