Make swiss rolls like we used to get in the old days.Pat out sausage meat on baking paper to a oblong, put a thin layer of mince on top carefully roll up, brush with beaten egg all over and crumb with dry breadcrumbs and fresh herbs. Chill 1/2 hr to set crumbs and slice 1/2 inch thick. Put slices in a ovenproof dish and bake about 30 mins 160 turn once, in a saucepan mix up cup water, cup tomato sauce, 1/4 cup brown sugar, blend over a low heat, remove dish from oven pour sauce over slices bake a further 30 mins around 180c basting slices frequently, till sauce is sticky. Nice comfort food in winter with mashed spuds and vegs. Or if you don't want to make the sauce you can just fry slices and have with gravy or good old tomato sauce.
