Ah just eaten this one!
This is Fisher's recipe .
Super Meatloaf like Ma used to make
Preheat oven to 180 c (Well worth the effort)
Slice up two sticks of celery 2 medium onions and three rashers of rind less bacon and fry in oil.Chop bacon into fine pieces.
In a bowl add ~ 1 egg 1/2 cup of milk 3 crust less slices of bread 1/2 cup of parsley 1/2 cup of grated carrot 1 tsp Dijon mustard
2 tsp curry powder 2 tsp cumin powder 2 tbsp tomato sauce 2 tbsp Worcestershire sauce salt and ground black pepper .
Now add the celery onions and bacon pieces and mix all well together. Add 500 gms of minced beef and 500 gms of sausage meat.
Mix well using wet hands and place into loaf tin .Place in oven for 30 mins at 180c and while waiting make the sauce.
Sauce:
In a saucepan place ~ 3/4 cup water 3/4 cup tomato sauce 2 tbsp honey 2 tbsp Worcestershire sauce 2 tbsp white wine vinegar
1/4 cup of brown sugar ( Can add 1 tsp of instant coffee if desired ) On low heat stir until blended.
Method:
Remove meatloaf from oven and pour off excess fat. Pour over sauce and replace in oven at 180c for a further 30 mins. Baste often.

Made a large loaf so had half hot one night then tonight had it cold.Was delicious!

here's one: makes two loafs suitable for freezing.
1kg mince, 500g sausage meat
1 c soft bread crumbs, 1 egg, 1 tbsp tom sauce
1/2 c milk
1 tbsp worchester sauce
1/4 c chopped onion, 2tsp salt, 1/4 tsp pepper, 1 tsp mustard, 1/2 tsp mixed herbs. 1/4 c chopped celery
*1/2 c dry breadcrumbs
Combine all except *. Mix well. With wet hands form into 2 loaves and coat with dry breadcrumbs. Place side by side in roasting pan. Pour 1 + 1/2 c water into dish. Bake 180c 1 hour.
This is really yummy and moist. flexible with ingreds. good to freeze.
Really good to make for the elderly, so serve smaller portions.
(I like this one and don't normally like meat loaf)

1 PKT MAGGI CREAM OF CHICKEN SOUP
1 EGG
GOOD PINCH CURRY POWDER
GOOD PINCH MIXED DRIED HERBS
SALT & PEPPER
DRIED BREADCRUMBS

MIX ALL INGREDIENTS AND SHAPE INTO LOAF, SPRINKLE ABOUT A CUP OF BREADCRUMBS IN SMALL ROASTING DISH AND TURN MEATLOAF IN THEM, POUR A CUP OF WATER AROUND LOAF, BAKE ABOUT 1 ½ HOURS AT 180C

Onion Meat Loaf

1kg Mince2/3 cup milk1 packet onion soup1 egg

Line a loaf tin with foil. Mix above ingredients together and press into the tin. Refrigerate for 2 hours.
Sauce:-Mixtogether 3 Tbsp brown sugar, 2 Tbsp dry mustard, 3 Tbsp tomato sauce.
Spread ½the sauce on top of the loaf before putting it in the oven and the other½
way through cooking.
Bake for 1hour at 180ºC

Ham & Cheese Loaf

750g mince2 slices bread (minced)1 cup milk
1 egg1 med onion chopped1 tsp salt
½tsp dry sage½ tsp dry mustard2 cloves garlic
1 Tbsp Worcester sauce 4 slices thin ham
4 slices processed cheese (Gruyere

Mix milk and egg, then add everything else and mix again. Put ½ the mixture in loaf tin. Roll up the cheese and ham together and place on top of mixture. Add the other ½ of the meat mix.
Bake 1½ hours at 180ºC
