Home made smoked Bacon

Have just made our first lot using Pork belly.it is delicious and was so easy to do.Does anyone else make their own bacon and want to share their tips!
I did put quite a lot of maple syrup on it,but that flavour got lost with the smoking.

I have some pork belly in the freezer I want to make bacon with but I want to soak it in the brine rather than dry it with salt. How'd u do yours!

I dried it with the salt and maple syrup for 5 days ,then smoked it.

I've tried "real" bacon.
Very disappointing.

The secret is to never buy shoulder bacon and NEVER fry it.
Buy the strips.and grill it.
perfect, no moisture, crispy great bacon, even the cheapest.

It's how you cook it, not what goes in it.

I prefer to make my own because I'm trying to avoid the chemicals they add to store bought bacon.

I make our own Hams, Bacon, Pancetta and Proscuitto.

The shoulder actually has more flavour when using the cut for homemade bacons.

But I do agree, that shoulder bacon should never be purchased from a store.
