Leave them in the bag, cut the top off, put all your favourite herbs,spices andsauces in, shake, marinade, bbq!

waiting6, how about a marinade! I just throw mine together with garlic, minced ginger, chilli, soya sauce, honey, tomato sauce and any other sauce I have around, eg plum, apricot etc. mix it all together in a ziplock bag, fire in your chicken and leave up to 24hrs, tossing to mix every so often. Bake @ 180/200 for around 40 mins or until the juice is clear :o)

Chicken, Apricots & Coconut Milk (Nigel Slater)

serves 4

3 stalks lemongrass
50g fresh ginger
2 hot chillis
2 cloves garlic
bunch of coriander
2 limes
1 tab coconut or peanut oil
200g tomatoes, roughly chopped
1 tab fish sauce
2 tab dark soy sauce
8 chicken thighs or a whole jointed chicken
8 apricots, fresh or dried, halved and stoned
400 ml coconut milk

Trim lemongrass, peel ginger, chop chillies, peel garlic, zest limes, place in mini-processor with coriander stems and half of the coriander leaves.Whizz to a coarse paste, adding a little oil if necessary.Add tomatoes, fish sauce and soy sauce and whizz again.

Heat oil in a deep pan over moderately high heat, brown chicken.Remove chicken, pour off fat leaving 1 tab.Add half of the spice paste and fry 2 min.Add chicken and coconut milk, cover and simmer 10 min.Add apricots, cook 10 min or until chicken is tender.

Add lime juice and coriander leaves, check salt.

Keep remaining spice paste in fridge up to a week, covered with oil.

Chicken with Plums & Soy

serves 4

1 small free range chicken, jointed or 8 thighs, skin on
1 tab peanut oil
1 - 4 med-hot red chillis
4 cloves garlic, sliced
2 cm ginger, peeled and thinly sliced
8 plums, halved & stoned
3 tab soy sauce
small bunch of coriander, leaves only
salt & pepper

Heat oven to 200C.Put chicken in roasting pan, trickle with oil, season, roast 30 min.(Turn twice).

Halve and deseed chillies and cut into 1 cm strips.Add to chicken with garlic and ginger, turn chicken pieces.Roast 10 min.

Tuck plums around chicken, trickle over the say sauce, add a little water if pan is dry.Roast 10 min or until plums are soft.Baste, rest in warm place 10 min.Scatter with coriander to serve.

Chicken, tomatoes, tarragon
serves 6

1 large free range chicken, jointed
2 tab olive oil
125 ml white wine
juice of ½ lemon
500g tomatoes, halved or quartered
bunch of tarragon, leaves only, coarsely chopped
salr and pepper

Heat oven to 190 C.Heat large frying pan.Season chicken, brown in olive oil, transfer to bakibng pan.

Deglaze frying pan with wine, add to pan with lemon juice and more seasoning.Cover and bake 30 min.

Add tomatoes, nestling them cut side up among the chicken pieces.Bake uncovered 20 - 30 min until chicken is tender and tomatoes soft and blistered.

Scatter most of the tarragon over, toss to mix, leave to stand a few minutes.Sprinkle remaining tarragon over to serve.

Parsley works well instead of tarragon - three times the quantity.
